Yowza Healthy!

Do you like egg salad? My version may be a little different than yours, but I can guarantee, this one is packed with flavor (and it is yowza healthy).

Except for the Feta, everything you see in the photo up there typically comes from our garden. (The eggs came from a friend on this particular morning, and the cherry tomatoes are store-bought as it’s too early yet for those. When we are a little bit further into the season, my egg salad ingredients come from home).

At times I want something a bit more substantial and may add a piece of my husband’s grandmother’s shortcake, but usually, the only thing I vary in this recipe is the berries.

I warm olive oil in my small fry pan. I never measure.

egg salad w strawberries_May 2016 (5)I break three eggs into a small bowl and add a splash of water, a pinch of garlic powder, and a squeeze or two of freshly ground black pepper.

While the eggs are cooking, I prepare my plate with berries, and the spinach and lettuce I’ve grown in pots in my greenhouse.

egg salad w strawberries_May 2016 (4)Meanwhile, I chop the tomato, onion and basil leaves.

egg salad w strawberries_May 2016 (6)I usually keep Feta cheese on hand, and fortunately for me, it comes plain or flavored. I don’t completely avoid dairy, but I’ve found that using Feta is easier on my stomach.

These are the main ingredients I use to create this lovely dish.

egg salad w strawberries_May 2016 (2)It’s difficult to see the basil, but if you look closely, you may be able to see tiny, green pieces. When I have it, I always add cilantro as well.

egg salad w strawberries_May 2016 (8)A couple years ago after I first discovered Lucy’s shortcake (same link above), I cut a small piece and added some fresh raspberries from the garden. This is delicious.

egg salad with shortcake_May 2016This is my YOWZA breakfast. When ingredients permit, it’s my morning meal as often as possible. I wouldn’t have thought it likely that berries along with eggs, feta, onion, and fresh basil could taste so good. I was wrong.

    Looks absolutely delicious Karen.. I’m going to try it out (minus the shortbread) due to low carb. I love strawberries in my salads and also pomegranate seeds are really tasty too.. xx

      Wendy, well, a lot has happened since we last spoke about food. I had to go on the FODMAP diet AND a low acid/low fat diet for GERD. Long story short, I feel so much better!!! I was having nasty symptoms in my throat and neck and was afraid I was very allergic to some foods. No, it was a reaction to the properties of foods. So, pomegranates are off my list now–too acidic–as are many other foods (I don’t eat wheat now, either). But, it’s all good. How goes the food issues with you now? Hugs across the miles.

        Hi Karen, It’s lovely to hear from you. Wow how amazing that you’ve found a successful way of controlling your diet. It sounds fascinating and I’m sure it’s a big relief.         Hi Karen, How absolutely lovely to hear from you and certainly no apology necessary. As you can see from my delayed response, life sometimes gets in the way – and rightly so! I’m really pleased at how I’ve been able to get myself down to a pre-diabetic level with diet alone and have now remained at that level for 2 years. I’ve continued to follow the low carb diet (with a few cheats here and there – Easter being one of them!) and it’s worked really well and I still enjoy the food by just making some simple swaps for things like potato, rice and pasta etc.
        Yes – my mum encouraged us to eat everything on our plate – I think it was because she experienced rationing in the 2nd World War and couldn’t see food wasted. Well it’s lovely to hear from you Karen and I’m relieved you’ve not yet found yourself in the diabetic epidemic… lets hope it stays that way for you! Much love Wendy xx

          Hey there! I’ve missed you! I signed up to follow Brilliance Within when you decided to self host, but I don’t seem to be receiving right now. Have you changed something/anything? Anyway, congrats on the diet, too. I hope you enjoy continued success with your way of eating. It can mean a world of difference. It isn’t as hard as I first thought it may be.
          We had a bit of a scare recently when the husband was diagnosed with cancer, but after surgery and a time of healing, he’s cancer free. WHEEEEEW!!! We hope he stays that way for a very long time. During his ordeal, I wasn’t blogging at all. Sometimes we need to take a little break and focus elsewhere.

            Gosh Karen – what a year you’ve had. I’m so pleased your husband has got through his ordeal with a big thumbs up. Long may it continue!!! Something like that certainly puts life’s trials and tribulations into perspective. I’m not surprised you weren’t blogging Karen…
            I’m doing really well and before I changed my diet, I suffered terribly with Acid Reflux – to such an extent that I’ve permanently damaged my oesophagus and sometimes struggle to swallow food. The amazing thing is, that cutting right down on Carbohydrate has stopped the acid too. Whenever I ‘stray’ and have some carbs, it comes straight back. It just shows what a difference food makes doesn’t it. I thought eating more fat and less carb would aggravate the acid but actually the opposite was true. I’m on the hunt for your email. I seem to have lost lots of connections since going self-hosted but I’ve no idea why or what to do about it.. so emails may be the best way to keep in touch longer term. Big hug for now – golly you certainly deserve some positive vibrations after all you’ve been through. Much love xx

              Just a note on food: I learned I had GERD (the silent type, not the heartburn type) from persistent symptoms in my throat and mouth and sinus areas. The LES (lower esophageal sphincter) muscle separating the esophagus from the stomach relaxes when higher fat foods are eaten, and the reflux begins and the continued symptoms. This is why lower fat foods are better for me. But, the problem fats are animal fats, not any old fat. So, olive oil and coconut oil are fine. I’ve learned that coffee and chocolate are my triggers, too (acid). So, on we go. Best of luck to you.       It is the best! I have been making this breakfast for a couple years now and I just love adding the berries and fresh greens. My goal now is to have the greens in my little greenhouse all year when weather permits. 🙂
